About

Program open to JWU and non-JWU students.  Sophomore, Junior and Senior level Baking & Pastry Arts students can participate in this intensive program. You will study directly with top French pastry chefs at ENSP, the leading pastry arts school in France.  Located in Yssingeaux, ENSP is owned and operated by world renowned chef Alain Ducasse and pastry chef Yves Thuriés.  The program will use theory, demonstration and practice to develop your skills and knowledge in the French approach to tarts and entremets, chocolate and sugar art, petits fours, plated desserts, sorbets, ice cream, bread and viennese pastry.  The program will also include an introduction to modern technologies and trends.  Upon arrival to ENSP, you will take a lab skills assessment exam for placement into an AM lab group or a PM lab group.
